We use locally-milled, non-GMO, organic flour from Lindley Mills, and we make all of our baked goods with a sourdough levain.
Sourdough is the ancient way of baking. It captures the wild yeasts that are all around us, and allows the bread dough to long-ferment before baking. This results in heightened flavor and increased digestibility.
