Do you love sandwiches?

I LOVE SANDWICHES!

At one time, my family got in the habit of making grilled cheese every Sunday after church, but after so many grilled cheese sandwiches, we needed to expand. We played with different kinds of cheese. We added salami. I even started doing grilled avocado and goat cheese sandwiches (delicious, by the way!)

Recently, though, I’ve been loving this sandwich:

Veggie Sandwich Extraordinaire

Ingredients:
Sour'd Country Sourdough Loaf
Hummus of choice
English cucumber
Bell Pepper (red orange, or yellow)
Green Onion
Dried Basil
Parmigiano Reggiano cheese

Directions:
Spread each interior slice of bread with hummus. Add four thin slices of English cucumber. Top the cucumber with diced peppers and green onions. Sprinkle with dried basil and parmigiano reggiano cheese. Cut into four squares.

… and one more sandwich story:

My first job, when I was 16, was at Subway sandwiches.

Before I worked there, I ate there almost every week. (My mom detests cooking so we ate out a lot.) I always had the Club: turkey, ham, roast beef with all the veggies (no olives or hot peppers though.)

Subway used to have this competition where each store could send the manager and one employee to the local “Sub Jammer's” competition. We had to make a turkey sandwich, the Subway Way. The fastest, most accurately made sandwich competitor would win and advance to the states, and then the national competition.

I did not win this competition, but I received this trophy from my store owner for being our store’s employee representative. I blame my poor timing on the fact that the store we competed at was set up backwards from the store I worked in. Ah well. Such is life. At least I still have this hilarious trophy to showcase for all my hard work.
